Several trends cause today's destruction of this o Several trends cause today's destruction of this orchard, neighbouring the plot where we plant our trees:

International bulk production
A pear is as good as any, no matter where it comes from. As long as it fits the supermarket criteria, it can come from abroad. This trend of open markets resulted in specialization and scale enlargement. 
Originally each orchard had a variety of fruits, even combined with other crops and livestock, sold for the regional or national market. 
Nowadays fruit comes from across the continent, so farmers have to compete on the world market. They can only do so by enlarging the size of the orchard, hiring cheap labour, and specializing in the few fruits where they can still be competitive: hand pears (such as Conference, Doyenné and Lucas).

Solar fields
The orchard is too small to compete on the market of pears, so the owner gives in to the developer of solar fields. He doesn't have to work anymore and his pension money is safe thanks to the solar panels on his land. He sheds some tears for his loved and lost orchard that he cared for all these years. 
Renewable energy is needed, but why burn trees for it?!

Alternate direction
We work with an orchard that is transitioning to be organic and produce other fruits and crops again, meanwhile regenerating the soil. Where customers are involved and the fruit tastes better.
It's early stage, but how good would it be if a grower can produce fruits and crops that are aimed at
- Flavor vs looks
- Local vs international
- Inclusive vs abusive 
- Ecological vs chemical

To give you an idea: gradually the common crops (hand pears) are replaced with more varied trees (a.o. a large variation of apples) and by bringing in berries and herbs. Natural compost is brought in in stead of fertilizer. Weeds aren't sprayed but embraced. Geese graze and guard.

The coming year we'll cover more on the way our fruits grow. Spread the word by talking about our ciders and our mission, to help us #regenerate our landscape!

Last week we planted 65 Dabinett trees in a pear o Last week we planted 65 Dabinett trees in a pear orchard! 

Dabinetts are English bittersweet apples, and they will add a whole new flavor profile to our ciders, giving us more to play with. They will grow 5m tall more or less.

The tree planting is part of our yearly action: buy a box of the new harvest's 750ml Wild ciders, get a coupon for a tasting for 2 ánd we plant a tree. Follow our newsletter to order it later this spring!

This pear orchard is a commercial orchard that is transforming to a certified organic orchard and even further: it will incorporate food forest strategies and restore the soil using priciples by Elaine Ingham. It's transitioning into Regenerative agriculture. Look it up if you haven't heard of #regenerativeagriculture yet! 

Regenerative agriculture is about restoring the ecology in the soil, making it more productive without having to add chemical fertilizers. 
It is about reversing climate change by storing carbon in soils and trees. The larger amount of soil organic matter prevents both droughts and floods. The land itself is biodiverse again because no pesticides are used, rather the richness of the site's ecology is the pest management (think birds eating plagues). It's exciting for us to contibrute not only to the preservation of orchards but also to the development of food forests and regenerative agriculture in the Netherlands.

One of the orchards where we harvest a lot of our One of the orchards where we harvest a lot of our apples and pears is De Fazant. Like many traditional orchards, a large range of apple and pear varieties is present, making the harvest period long and the fruit available for a long period. The variety is originally also aimed at diverse uses: fresh consumption, keepers, stove pears etc. It leads to a wide range of flavors.

Besides apples and pears we harvest loads of plums, cherries and mulberries here.

The reason it's called De Fazant is obvious: pheasants roam everywhere and raise their young in the tall grass under the trees. Deer run around at twilight.
With 8 hectares it's the oldest largest still functioning organically certified orchard of it's kind. A so called "hoogstamboomgaard", referring to the standard trees / full size trees.

The beauty is that an orchard in this system combines natural and productive values on the same plot. 
It's why we're so committed to support orchards like this by producing a high-value product such as cider. At the same time, we've noticed that cider from these full grown trees tastes waaay better than your average supermarket fruit. So cider is a natural fit to give these orchards a new income!

Cheers to the winter weekend everyone! Last week Cheers to the winter weekend everyone! 
Last week we've ordered a neck freezer and new bottling line thanks to the fast and overwhelming success of our crowdfunding campaign! 
It allows us to bottle faster and better,  and also to make a champagne-style cider from our organic ciders.

As with everything in cidermaking, our profession is very seasonal. We love that. The past month has been a month of dreaming and planning. Because everything is fermenting slowly and we don't touch the cider at this stage.

By the way, this neck freezer feels a bit out of place in this season..but it's veerrrry important, really! ;)

A blanket of snow on our tanks. We hoped to be abl A blanket of snow on our tanks. We hoped to be able to make an ice cider this year. It's a form of cryo concentration using natural temperatures: the water part freezes faster than the alcohols and aromatic compounds. When you let the frozen part in the tank and transfer the rest to an other tank, you have a more concentrated cider.
For us it would only fit our craft and natural approach to do this in the winter (not using a freezer). With the cold period now we had hoped to be able to make an ice cider, but alas..
there's only one centimeter of ice on the least sheltered tank. So we'll stick to making regular cider and perry!

Now we can enjoy the snow at home while making new plans and listening to @ciderchatciderville

Whisky stout barrel aged cider never ceases to amaze us. 

And it's the perfect #wintercider:
Oak and charred wood, whisky and stout, add layers to the still fruity cider. It's refreshing and warming. If you haven't had it yet, you haven't tasted anything like it.
